Passionfruit Salad Freeze

Serves 6-8

Ingredients

1 x 820 g can of Fruit Salad, drained
2 tablespoons lemon juice
1 litre Tip Top Vanilla ice cream
½ cup Passionfruit pulp

 

Instructions

Puree the fruit in a blender or food processor.  Mix in the juice. Soften the ice cream slightly.  Mix the passionfruit pulp and half the fruit puree into the ice cream.. reserve the remaining puree.

Turn mixture into a 5-cup capacity jelly mould and freeze until firm. Unmould by dipping the mould into hot water for a few seconds. Then invert onto a plate.  Serve with the remaining puree as a sauce.
