Knickerbocker Glory
Serves 4
Ingredients
1 Packet of red jelly
1 packet yellow jelly
1 packet green jelly
450ml/2 cups Tip Top Vanilla Ice Cream or any other flavour
125ml/ ½ cup cream
20ml/4 tsp chocolate hail
4 glace cherries
Instructions
Make up each jelly according to the instructions on the packet and leave to set in separate dishes. When they have set completely, dice into small pieces. Use any flavour combination you like, but remember that the important thing is to use contrasting colours. You will have more jelly than you need for 4 Sundays – use as much or as little as you like.
A Knickerbocker Glory should always be served in a tall glass so that the different layers can be seen.
Place a few cubes of red jelly in the bottom of the glass, top with a scoop if ice cream, then cubes of green jelly, more ice cream and cubes of yellow jelly. Finish with another scoop of ice cream. Use any flavour – one or more varieties that you like
Whisk the cream until it is stiff and pile or pipe onto the ice cream.
Sprinkle with chocolate hail and crown with a cherry.
