Boysenberry Alaska

Serves 6

Ingredients

½ sponge sandwich
1 x 450g can of Boysenberries
1 litre Tip Top Boysenberry or Vanilla ice cream
3 egg whites
½ cup caster sugar

Instructions

Place the sponge on an ovenproof serving dish or a board which has been covered with baking paper.

Scoop out a little of the centre of the sponge cake.  Drain the berries and place in the centre.

Beat the egg whites until fluffy then gradually beat in the sugar, beating until the mixture is smooth and shiny.

Top boysenberries with scoops of ice cream.  Pile meringue on top smoothing over to encase the sponge, berries and ice cream.  Place under a pre-heated hot grill until meringue is lightly coloured. Serve immediately.
